Last night Brian and I were looking through our wedding pictures, selecting favorites for our wedding album. Here are a few of my personal favorites.

peanut butter | chocolate chip | cookies // flourless


These are the best cookies I've ever had, EVER! I made them for the first time last week and I've been craving them ever since I ate the last one...Naturally I had to make more and this time I wanted to share this goodness with you guys =]

 
 

These are amazing and they are for sure better for you than any other cookies! I just ate 3 while writing this ha ha.


I found these over at CupcakesOMG! and you should check this lady out, she's pretty awesome!


peanut butter | chocolate chip | cookies // flourless
makes about a dozen regular size cookies
[I made them a bit smaller and ended up with 16]
adapted from CupcakesOMG!

1 cup natural peanut butter
1/4 cup honey
1 egg
1/2 tsp baking soda
1/2 tsp salt
1/4 cup chocolate chips

[I used 1/2 of a Ritter Sport bar // Dark Whole Hazelnuts]

  •  Pre-heat oven to 350 Degrees F. Line a cookie sheet with non-stick foil of choice and/or grease it. I did both, overkill I know.
  • Add all ingredients to a bowl and mix together [hold off on the c.chips for now]. When combined, mix in the chocolate chips.
  • Using a cookie scoop or just a tablespoon, drop batter on to cookie sheet, this batter is stickier than normal cookie batter, but just go with it.
  • Bake for 8-10 minutes [I had to turn them half way through, so they brown evenly]. Take them out of the oven and let them cool for another 10 minutes. This is important, because they need to set up and harden a bit.
  • After the 10 minutes have passed pour yourself a glass of milk and eat up! When they have cooled completely, if there's any left, store them in an airtight container.

DIY // diaper cake


Last week I made a diaper cake for my girl Lindsey's baby shower. After some pinning I devised a plan and combined a few different techniques/ideas.

 

* This tutorial is for the 3 tier cake and not the smaller 2 tier one!

Materials:
65-70 Huggies diapers [next size up from newborn, these ones said between 8lb and 13lb]
12" round cardboard base
3 TP rolls insides OR 1 paper towel roll inside and 1 TP roll inside
tape
hot glue gun and glue sticks
rubber bands [ I used the thin ones, because they stretch more]
tissue paper
AND
whatever kind of decorations you want to put on your cake



First I rolled all my diapers and set aside. Taped together the TP rolls, then placed them in the center of the base and hot glued them in place.
*at this point cover your base in tissue paper, if using plain cardboard.


Next I added my first layer of diapers around the base. Started off with 7 and added more around those until I had 3 layers for the first tier. Add a rubber band to [or tie with string] each layer so they stay in place.


For the second tier I again started with 7 diapers around the base, rubber-banned the whole thing and added a second layer and rubber-banned that as well.


After adding the 3rd tier, there was a bit of the TP roll sticking out, I marked and cut where the diapers ended. The last tier consisted of only 7 diapers.


After the cake was done I added some tissue paper and ribbon to hide the rubber bands.


I had originally bought too many diapers and had enough to make a smaller cake as well! My friend Jules helped decorate them. We added baby shampoo and oil bottles w/ more tissue paper as toppers, little socks w/ ribbons and two ADORABLE toys.


So there it is, my first diaper cake!!! Or two =]=]=]

Baby Shower Time



As many of you know by now, I embrace any excuse to get together with friends and have a blast. This time around we were celebrating, and anticipating, the upcoming birth of our sweet Lindsey's baby!!!



Lindsey and her hubby Dave didn't want to know if they were having a boy or a girl and this made for an awesome rainbow colored shower.
Jules and I also made our first diaper cake[s]. They turned out fantabulous, as Jules would say =]


 
 
 
 

For snacks we had tuna and mini pita bread sammies, fresh fruit, hummus with veggies, tea, and some sweet treats.


As favors we gave out flower headbands I made for a post, so stay tuned the tutorial is coming =]

Also tomorrow, I'll show you how easy it was to make the diaper cakes!!!

neighborhood finds // 2.0

 It seems like there are cafes popping up everywhere in our neighborhood. This one in particular is the cutest and coolest of them all! "How come?" you ask, well it's hot pink and they sell Nutella cupcakes as big as my face!!! Well almost as big =]


The day we went, we first had a butternut squash bisque with coconut milk. YUM!


Then also tried the Gruyère and onion quiche...


...and the bacon, spinach, tomato quiche. They were both very good.

You feed me, I'm happy! =]=]=]

necklace for the birthday girl

As promised, here are a few shots of my gift for Jules.



Super easy to make too, I got all my supplies from Joann's. I stung up all the small beads and that took a little while, but I have in the past seen ones that are already on strings and in bunches, just like this one. I added two wooden beads on each side to hide the metal crimp beads I used to hold all the strings together. Also gave it some pearls to make it fancy =] and that was it.

Birthday FUN!

Two of the things I love most are food and birthdays. You just can't beat a bday celebration, be it mine or a friend's. The drinks, the food, the happiness...the CAKE...you know =]

Last Wednesday was my friend's Jules birthday and we had a great time. Started off with an awesome dinner at Maras @ The Westin in Lima and ended up, by popular demand, at the casino.





You are going to have to excuse the less than perfect iphone pictures, but I grabed my phone for pictures and not my camera; it's always been my problem =]

And the gift you ask? I made her a necklace, I'll show you it tomorrow.
